French from Alsace, Mathilde followed her father from an early age in the chocolate workshop of the family business. Jean-Yves Fays, master chocolatier, pastry chef and ice cream maker with more than 30 years of experience, not only passed on his know-how, but also his great passion for chocolate. FAYS is thus a fine rural chocolate factory founded by Mathilde Fays, chocolatier and pastry chef from father to daughter. For more than 9 years, FAYS has been innovating by drawing inspiration from tradition and local flavors to which the team combines the highest quality chocolates. Established in the countryside with the conviction that the earth is the source of the best creations, the chocolate factory reinvents tradition to offer you an extraordinary chocolate experience and proudly from here. With more than sixty points of sale in Quebec, FAYS also opened the doors of a second store in 2017, in the heart of the village of Sainte-Thérèse.
