Fiddleheads are the instrument that announces spring. They have the elegance of fairies and the delicacy of the finest greenery. It is one of the first doses of chlorophyll and the beginning of abundance in the forest. At Gourmet Sauvage they are prepared in a light marinade to keep their firm texture and allow you to brighten up your dishes with this precious greenery all year round.
Additional information: From the month of May, the fiddlehead harvest arrives. These are picked by hand in the forest with the concern of preserving the resource always in mind. Never more than a third of the specimens are taken from the same plant so that it can develop fully. They are then blanched, potted by hand then put in brine.
Directions for use: Both a condiment and an accompanying vegetable, fiddleheads are a classic of wild cuisine that your guests will appreciate. Once drained and rinsed, they can be used to prepare a host of recipes. Excellent in a Caesar salad, as an appetizer with prosciutto and melon, as an aperitif as an appetizer or in a legume salad.
