Dehydrated Trumpets of Death
Pickup available at DIX30
The trumpet of death, also called cornucopia chanterelle, is only repulsive in name, because this mushroom has the distinct taste of cocoa, aromas of butter and the fine texture of paper. If its color puts off more than one person, its other attributes will convince you to adopt it in the kitchen because the trumpet has no equal.
Additional information: Death trumpets are not easily harvested because their color is difficult to stand out from the forest floor covered with dead leaves. They fruit in small tillers which often go unnoticed. The picker who finds them, generally in a red oak forest, will do well to bend down on all fours and scan the ground: it is very likely that they are more abundant than they appear.
This mushroom is the perfect companion to creamy sauces, sautéed onions and goat cheese omelettes. It is delicious in soups and with grilled vegetables.
Directions for use: Rehydrate the mushrooms in a liquid (water, broth, milk, wine, etc.) until they are full (the time varies depending on whether the liquid is hot or cold), then add them to your recipe. Remember to collect the rehydration liquid, taking care to filter it, it is full of the good taste of mushrooms! If your recipe already contains liquid, there is no need to rehydrate the mushrooms beforehand.
Death trumpets can be used whole or crumbled. Note that the conical shape of the trumpets sometimes causes an accumulation of debris. Even if they are well cleaned, take care to filter the rehydration liquid before using it again.
