Les Canardises is a family farm and cannery founded in 2003 by Yolande and Pascal Klein, today helped by their children Camille and Pierre. The ducks are raised outdoors, without hormones or antibiotics, then processed on site using methods inspired by French tradition. The cassoulet's ingredients are made in house.
Format: 850 g tin, about 2 servings.
Ingredients: white beans, duck stock, duck confit (wings), Toulouse sausages (pork and seasonings), pork, tomatoes, salt pork, carrots, onions, garlic, fine duck fat, fleur de sel de Guérande, spices and seasonings.
Serving suggestion: put the contents in an oven-safe dish and reheat slowly, until the top turns golden.
Storage: refrigerate after opening and eat within 3 to 6 days.
Origin: cooked at the farm, in Saint-Ferréol-les-Neiges, in the Capitale-Nationale.
