Remember the taste of Grandma's fudge. Or her sugar pie. That is, if your grandmother was from rural Quebec or the working-class neighborhoods of the big city. That's the basis of our caramel. We also added apples, like in apple butter. It makes the caramel less sweet and more enjoyable.
