Glasswort grows between the tides, along the St. Lawrence River. Behind its small cactus appearance hides a succulent plant with a salty taste and crunchy texture which makes it the perfect accompaniment for fish, salads and hors d'oeuvres.
Fresh samphire is tasty, but the harvest season is short. What a joy to be able to enjoy the extraordinary crunchy texture and iodized taste of this very popular plant in Europe that we are only just beginning to discover here!
Additional Information: Salicornia is hand-picked from tide-washed territories. Immersed for several hours a day in very cold water then exposed to the sun's rays, salicornia is a resilient plant perfectly adapted to its environment. Only the ends, which are more tender, are picked and then marinated in a light brine. The result is an artisanal condiment that is both tasty and decorative.
Directions for use: A small branch is often enough to brighten up a scallop, a cracker with pâté or smoked salmon. But also in a hot dog to replace sauerkraut, in potato salad, in a tartare or with fondue.
