La Terre du 9 is a family farm on the rang 9, in Beauce, where Amélie Lessard and Stéphane Binette grow garlic with their two sons. The bulbs dry for about three weeks, then spend 30 to 40 days in a low-temperature oven under controlled humidity: it is that slow caramelization that gives black garlic, all mellowness, without the bite of fresh garlic. The cider vinegar soaks it up and gains in umami.

Ingredients: apple cider vinegar, Quebec garlic, black garlic. Gluten-free, nut-free and vegan.
Serving suggestion: deglaze your dishes, brighten your salads and your sauces, or finish a plate of roasted vegetables with a drizzle.
Storage: keep in a dry place.
Origin: made in Saint-Honoré-de-Shenley, in Chaudière-Appalaches.
