Additional information: The salicornia looks like a small cactus that is picked between the tides on the flats along the River. Its crunchy texture and salty taste make it an exceptional condiment that we highlight in our homemade mustard recipe. Slightly spicy, it highlights the extraordinary texture of samphire and its unique iodized taste. It adds a decidedly different wild touch to cooking and delights fans looking for new flavors.
Directions for use: This is a very versatile product that goes well with sandwiches and grilled meats, and finds its place in many recipes, even where you least expect it! As a vinaigrette in a potato salad, as a marinade for tofu, as a sauce for white fish, in a salmon tartare, on appetizers with pâté or as a dip with yogurt for raw vegetables.
